COMSOL Model Does Not Interpolate 3D Material Data

Hello,
I am simulating a microwave problem, and I wanted to test COMSOL's ability to interpolate material data by following this tutorial: https://www.comsol.com/blogs/how-to-use-interpolated-material-data-to-model-irregular-geometries/ . I created a figure that details that basic steps for loading and processing the data.
I re-ran the tutorial on my workstation and it output the exact same results that was posted in the tutorial. This greatly encouraged me to try this out on my own liver models, so I created synthetic test data to see how well the data can be interpolated on my models. For this post, I will use electrical conducrivity as the material parameter since both out models use this. Here is a figure that shows the comparison of the Interpolation Settings and what the data looks like in 3D.
And Here is a figure that shows the assignment of the data in the Material Setting tree and the Material Modeling Domain. For consistency, I used the exact same names for the interpolation functions.
I ran both simulations and I plotted the electrical conductivity values that were interpolated from the original data. The tutorial model interpolated the material data fairly well, but my data did not interpolate at all. I even plotted the original data to show the intersection between my model and the original data.
What is interesting is that COMSOL selected the value that was more dominantly represented in my input dataset (.86 S/m) and made it the material value for the entire domain. I am puzzled as to why this specifically happened. As a reminder the model I created was only to test COMSOL's ability to interpolate material data. Any help or insight would be greatly appreciated.
