                                                    Relevant properties are always difficult to find for biological materials.  They can change quite a bit depending on temperature, hydration, damage, or any number of other parameters.
I have the best luck searching for published journal articles that measure the property you are looking for.  Another good source is a book called "Physical Properties of Tissue: A Comprehensive Reference Book" by Francis A. Duck.  It is out of print, but you might find it a local library.  There is a good chance it has what you are looking for, there is a whole chapter on acoustic properties.
